We use the ripe, dried stems of the oat stalk. We have done much research on this since we have customers who have this sensitivity. Given that the oat grain itself is not used some feel it is quite all right if you are gluten sensitive while others who are extremely cautious will not use it. So, even with all the research we have come to realize it is a personal choice as the scientific documentation is inconclusive.
